Mabye they like the sound of the word "Ding"?
Also in some Asian countries the first name is the family name, like the Pakistani cricketers Shahid Afridi and Shoaib Akhtar, who always have "Shahid" and "Shoaib" on the back of their shirts instead of "Afridi" and "Akhtar".

As far as I know the chinese put their last name first so Ding is his last name

Ding is actually his surname, and Junhui is his given name. In China, the surname is put first and then the given name.
