I want to cook a sauce to go with some mushroom tortelleni but I'm not sure what to do. I don't eat meat or fish so only vegetarian options please!

Bechamel Sauce (Classic Italian White Sauce)

5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna
1/2 cup all-purpose flour
4 cups whole milk at room temperature
Pinch freshly grated nutmeg
1 1/2 cups tomato sauce, recipe follows
Salt and white pepper

In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.

THE REASON I WOULD PICK THIS OVER ALFREDO IS THE ALFREDO MAY OVERPOWER THE MUSHROOM FLAVOR.

'IamMARE' has it. You want a brown butter sauce, I think.

Cheese, like the alfredo suggested, can get a bit heavy with tortellini.

Other options:

Persillade.

Actually. Re-thinking this, *I* have your answer. It's clearly persillade, with butter -- browned if you like -- with some parmigiano-reggiano shaved on top. Asparagus on the side...

But tomato sauce is good on mushroom tortellini, too. Especially if there's any cheese in them.

A nice white Alfredo sauce would be great with mushroom tortelleni. and comparatively easy to make.

Ingredients:
1/2 cup butter or margarine
2/3 cup heavy cream
1 1/4 cup grated Parmesan cheese
1/4 teaspoon salt
dash of pepper
noodles or fettuccine, cooked


Directions:

Cook noodles or fettuccine according to package directions. Heat butter and cream in saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper; stir until sauce is blended and fairly smooth. Add to drained noodles and toss until they are well coated. Sprinkle with remaining cheese.

Sage brown butter sauce.

1/4 cup butter
hand full fresh sage leaves

In frying pan, melt butter over med. high heat, till it just starts to turn color, and smell 'nutty'.
Add sage leaves.
Fry till butter is light brown and nutty smelling.
If you want to thin out the sauce, add a little of the pasta cooking water.

Reserve some shredded sage for garnish.

It's a nice light sauce to go with the tortellini - which I think tend to be heavy on the stomach.

A garlic alfredo with a deep cream base.

Sprinkle in basil and parsley. After you reduce the sauce, add the tortellini and it will make a nice dish.

why not try a nice white wine sauce with mushroom. sounds good

Onion sauce/ white sauce can add anything to white sauce.

hmmm a pesto would be good. You can find the recipe on about any website. I like foodnetwork.com or allrecipes.com. Or a Alfredo sauce would be good, if you eat dairy?
