You're doing great...if you aren't hungry. Since you are only eating egg whites, you can increase those by double without being a determent to your diet. The OJ is a little high in sugar content, but the health factors override that.

That's very good!! Just make sure the wheat muffin says "whole wheat". Avoid butter on the muffin, try sugar free jam or a little peanut butter. Also, 2 hours later eat a yogurt. It's ideal to eat every 2 - 3 hours to keep your metabolism going. (small amounts of healthy choices, like, yogurt, a piece of fruit, or some raw veggies) Drink 6 8oz glasses of water a day. Try tuna on your muffin, and a sliced tomato for a side, and 1/2 a cup of cottage cheese for lunch. 2 hours later, have another healthy snack. For dinner, try grilled boneless, skinless, chicken breast, and a wholesome salad with fat free dressing. Again, 2 hours later, but not within 2 hours of bedtime, have another healthy snack. I hope this was of some help. I know you didn't ask for a daily menu, but you seemed in doubt! Good luck, and congrats on eating healthy!!

As long as you don't have them everyday for breakfast, the yolk of the egg is perfectly fine to eat. I often soft boil an egg or two and put it on a piece of mult-grain toast (no butter..the yolk gives it the flavour). I add a grinding of pepper and sometimes have either water, tea or 1/2 cup of skim milk with it. It's delicious and keeps me going through the morning so that I don't get hungry mid morning and get an unhealthy snack to snack on. I also sometimes take an apple with me.
Your breakfast sound healthy except I don't know about the orange juice. We often buy orange juice but make sure you buy "freshly squeezed" orange juice with preferably the pulp in it (fibre) and no added sugar (one time I bought a juice brand I usually buy but it said Premium orange juice..I looked at the label and it actaully had sugar added to it!). Better yet, juice it yourself!

Not bad ... just make sure your english muffin is not theThomas' brand. They put high fructose corn syrup in the Eng. muffins and that stuff is the worst.

You probably could do better by limiting the OJ to 4oz and only eating the eggs two or three days a week. (This is your breakfast every day, right?)
