In Genisis 35 we read:

And God said unto him, Thy name is Jacob: thy name shall not be called any more Jacob, but Israel shall be thy name: and he called his name Israel.

God collected the 12 Jewish tribes and brought them from slavery in Egypt to the promised land in Palestine. The nation became known as Israel. When the tribes scattered after the crucifixion, they were re-united 60 years ago, again in Palestine, and the modern nation of Israel was born, exactly as prophecised.

If you mean the WORD Israel, it comes from the Hebrew name יִשְׂרָאֵל (Yisra'el) meaning "God contended". In the Old Testament Israel (who was formerly named Jacob; see Genesis 32:28) wrestled with an angel.

1. When Jacob wrestled with God and God was defeated...He change Jacob name to Israel because He always wins the struggle from men and God. (Gen 32:28)
2. At Bethel, God name Jacob... ISRAEL. Jacob will give God many childrens. Then many nations, many kings will descend from Jacob and the Promise Land (given to Abraham & Isaac) will be given to him too. (Gen 35:10-15)

Originally it was the name of one of the sons of Abraham.

From his descendants were Moses and Jesus, and the "Jewish race", Sons of Israel, Bani Israel.

After the holocaust during WWII, the UN and Britain allocated Palestinian land for the Jewish refugees of the holocaust, who were mostly European Jews, and they called that country Israel.

Israel Means "He will rule with the Almighty". Yahudim (from which "Jew" comes) means worshipper of YHVH. (See Rev.2:9 and 3:9)
