37 degrees celcius, as this is the optimum temperature for growth of most micro-organisms (yeast, in breads case)

I find the airing or linen cupboard has a nice ambient heat for proving bread.

I aim for warm, and preferably humid, not sure what that would be, somewhere around 20 to 25 C? If I feel comfortably warm, then that would be about the minimum for the dough.

My mother used to prove hers in the airing cupboard.It allways did the trick?

A plastic shopping bag works well. It keeps it nice and warm and moist. Don't let the dough touch the bag as it expands.
