Something that I make and my guest go nuts for are these flaky pigs (sausage rolls) in a blanket. Buy two packages of flaky pastry dough (puff pastry will work) and enough sausage links for 80 (2 pr) . Cut the pastry to wrap around the sausage, leaving the ends open. Place on a cookie sheet and bake at 350 till golden brown. Yummy Serve with any sauce you like. I use two, a raspberry sauce and a dill sauce.

If it's a sit-down meal, I like to go with a big lasagna. If it's a 'grazing' party, then why not Swedish Meatballs.

Chili goes over well too. Get a few crock-pots and make either a few different types, or just make 1 type, and in each crock pot modify the spice a little. If you make it on the thick side, you can eat it off a plate with a fork.

A family favorite are my "Lazy Pirogi's" - or "Lazy P's". Real simple, and it's good as either a side dish, or a full meal - and is HIGHLY adjustable.

Serves 10-12 as side 6-8 as meal
1.5 lbs Polish Sausage - I only used smoked, never fresh.
1 lb Rotini pasta
1 large jar Sauerkraut
1 large onion
1/2 lb butter
salt and pepper to taste
caraway seed (optional)

Cook pasta as per instructions on box.
Slice the sausage in small disks and saute in butter they pick up some color.
Drain sauerkraut - reserving liquid
slice onion into thin slices or large dice, saute in butter till translucent.
Add drained sauerkraut, Saute till kraut is soft.
Add Salt, pepper, caraway seed and reserved kraut liquid to taste.
Mix onion/kraut/butter, pasta and sausage together, place in crock-pot to keep warm.

** I know it's a lot of butter, but the pasta absorbs a lot of it, and it does feed a few people. I've tried this with olive oil, and margerines, and the taste isn't as good.

Soups are always a hit too, but the you have to make sure there are bowls and spoons.

If you're just looking for finger foods... A favorite at my house is home made Pepperoni Bread with sauce on the side for dipping. Just get some bread dough, roll it out thin, like you're making a thin pizza, sprinkle it with mozz cheese, and sliced pepperoni. Roll it up, tuck in the ends, and score the top. Let it rise for about 30 min, then pop it into the oven till golden brown. Let it cool completely before slicing it really thin. It can be eaten cold, room temp, or warmed up - My nieces call it 'inside out pizza'.

If you have that Italian spice in you, you can make tomato sauce. Pasta is a great inexpensive meal. You can make meatballs and sausage to go with the sauce as well. If this isn't what you want on your menu maybe have a Mexican themed night, you can make tacos, fajitas, & rice. This is always a favorite as well. My guests love the mexican & Italian food, and the greatest part is they are an easy and inexpensive way to entertain.

Also you can try to maybe order a hero from the local deli, maybe like a 6 footer (Half Italian - Half American). Heros make a great snack, lunch, or even dinner. Good luck!!

tacos, mexican rice, a pot of 'drunken' beans are my suggestion.

tacos- if you know how to make 'carne asada' (you can usually get the meat preseasoned at a mexican grocery store that has a butcher dept) that would be fantastic. just provide either corn or flour tortillas, some salsa, chopped cilantro, chopped onions and let your guests 'make their own' tacos. or of course you could just make some seasoned ground beef tacos (you could add some potatoes in as an added treat), provide shredded lettuce, cheese, sour cream, salsa.

'drunken beans'- you can find a good recipe if you google it
