I have a bag of Dole Spring Mix salad kit. According to the bag it contains a blend of baby lettuces, greens, endive, and radicchio. I just don't feel like eating another salad anymore, and don't want this to go to waste. Can I use these in some kind of soup? How?

sure u can. my wife does this often with a chicken base. she likes to add these asian noodles. they are kinda a clear jelly 10 inch noodle but great filler. just get your soup stock ready then towards time to eat let the greens cook a few minutes on simmer to soften up. adds a distinct flavor. enjoy

Sure you can. Make a cream of wild green soup. Saute your greens in a veg oil. Make a nice but not too think whit sauce and add the greens. I'd season with a little ginger and sea-salt.

I do all the time. I make "Italian Wedding Soup" and instead of adding spinach at the end, I throw in what ever I have in the fridge.

You can add this to any soup , whether it is a boulion base (like chicken) , or a thick cream soup.

You might even find you like to have your salad this way.

At the end of the week, my sister always just cleaned out the 'fridge and made a "soup" of what ever was in there....hard boiled eggs, meat, greens, veggies, you name it,,,and no one ever got sick!!

And I stayed away...
