Nutrient retention is the amount of nutrients or fertilizer that the soil can hold on to and not lose by leaching with water. Coarse soil structure results in serious leaching loss of applied chemical fertilizers and irrigation water, which not only increases the production cost, but also causes environmental problems. The nutrient retention capacity of the soil can be improved by adding organic matter to the soil.

"Nutrient retention" is temporal or perpetual loss of nutrient from stream, river, lake and reservoir. The causes of nutrient retention are physical, chemical, biological factors. In other words, nutrient retention can be called "nutrent removal" or "nutrent loss".
Additional, "Nutrient retention" can be defined "hold on by soil". So I agree with John H, but he just gave us a aspect of this question. who put forward the term of "nutrient retention"? Who can tell me?

Not entirely sure but I think it is to do with calculating the nutritional value of some uncooked foods...Something along those lines anyway
