as in frying off carrots leeks onion and sweade,its a recipe [part off] from my mum what do i need to do this for why not just peel chop and put in the water,what does sweating them off do.

It released the flavours on the vegetables, sugars especially, and adds depth of flavour to the stew

Frying the veggies before putting them in a soup or stew helps them to retain their flavor. If you just boil them, everything pretty much ends up in the liquid, including the nutrients. That's why when you make a soup stock you don't have to fry the veggies first, you just boil everything because then you strain it and throw out the veggies.

If you did ever put the veggies in a stew or soup directly, you would be able to taste the difference. It would be quite bland!

It changes the flavour slightly, e.g. onion will be sweeter. You don't HAVE to do it, just some people like to.
I don't fry much because I prefer not to, I just chop up the vegetables, and straight into the pot, with plenty of herbs, spices and sometimes wine.
Try out both ways and see which you prefer.
