how do i make sure a letter or written c.v. is straight and in the middle?

Assuming you are using a word processor, are three icons in your options. One shows the lines on the left, one shows lines on the right & another in the middle. Click on the middle one & now everything you type will be centralized.

I presume you are writing in Word. click on the shortcut at the top of the screen for 'justify' it looks like a bar code.

to change go to your tool bar right hand corner and click the second box in the little lines bit
