Like everyone else stated, they speak "thai." It is important to note though, that not all "thai" is the same as there are regional differences. The main language is central (krungthep / bangkok) thai and there are differences with the language spoken in the northeast, referred to as Issan. Also, in the northeast, near the Laos border, many thai people also speak Lao and vice versa.

If you are attempting to learn to speak the thai language, classes and Rosetta etc.. teach the central thai language.

Native Language - Thai
Second Language - Chinese and English
Second language is NOT official. Most of Thai people are from Chinese family, but not all of them can speak chineses.

The language is Thai - NOT Siam.
The country's official name was Siam until 24 June 1939. It was again called Siam between 1945 and May 11, 1949, when it was again changed by official proclamation. The word Thai means "freedom" in the Thai language.
