Don't do it by email. Put forth some effort, show compassion. People who are suffering as your colleague is rarely find the time to go online or check email messages. Send a card via the postal service or place it on his desk at work. Better yet, offer your undivided attention if he just needs to talk.
A single line would not show you are sincere.

In person, tell your colleague, "I've been thinking about you and I know that this is a terrible and tough time for you. Is there anything I can help you with, here at work, so you can have a little extra time with your mother?" If the anwer is "no", simply say, "You and your family are in my prayers."

Don't send it through email. Go to the store and buy a sympathy card, write something simple like, "If there is anything I can do, let me know". This is much more personal and compassionate than an email. It shows that you are truly sorry for this person and what they're going through.
