usually a dress holds a variety of designs that cannot be seen when bunched together. The photographer probably wants to ensure the picture has all of the "Effects" if you will, of the dress in it so that the family who is recieveing the pictures is very satisfied when they get them. The bride will be able to remember her dress beautifully.

They don't the photog. does. They do this to show all of the designs on the wedding gown that are impossible to see otherwise. It also creates a fabulous effect.
