Have a look at some of the seed catalogues - Marshalls or Thompsons do good ones as a couple of examples to look in to see what are easy to grow. (I have no business connection with ANY seed companies!)

I think mint is meant to be quite easy to grow. You can buy little sets of 'grow your own herb garden' sort of thing that you can grow on your window ledge. Comes with pots and the seeds and everything and instructions on how to do it.
For veg, I think it's quite hard work keeping the pests off, but root vegetables are usually quite easy, such as potatoes and carrots. Also, I know someone that grow lettuce in a pot! Tomatoes are probably the easiest though because you can just cut open a grow bag and put them in and they take care of themself. Not sure it's the right season to be starting this stuff, but suppose if you look into now, you'll be ready when it gets warmer.

I think most vegetables and herbs are easy to grow, although some easier than others, and many varieties can be container grown.
Runner beans, good value for money giving a good yield for the amount of space.
French beans, can be sewn at intervals over several weeks.
Tomatoes, lots of varieties and sizes, for greenhouse or outdoors.
Salad items such as lettuce, cucumber, radish, onion.
The standard culinary herbs like sage, rosemary, thyme, mint, chives and parsley, although parsley can take a long time to germinate.

I think onions and garlic are definitely the easiest things to grow. And mint is the easiest herb

mint grows well, almost too well. Parsley is also quite easy. Stay away from basil, lovely as it is, it has never been a strong herb for me.
As far as vegetables go, try pumpkin or squash.
And for everyone who said tomato, thats a fruit. - but it is easy to grow.

It does depend where you are and what your soil and climate is like - also the time of year- but here in the UK I reckon leeks are one of the easiest crops. You can buy them as slim young plants and just drop them into holes and they are away. Once they are in they just need a bit of hoeing and that's it.
Parsnips are just as easy and you can start them as seed - no transplanting.
For my money rocket and greek cress are two of the easiest herbs to grow. They self-seed beautifully from year to year.

tomatoes are easy to grow. I grew some last year for the first time and I got loads of tomatoes they were lovely and sweet.
Mint is very easy to grow. I grow it in a pot as it grows very fast and would take over the garden.

Salad springs up with no effort, sprinkle and *ping!* salad. more or less like that.
Tomatoes are very easy, you don't need loads of space, i grow mine in hanging baskets due to lack of space.
Mint is dead easy to grow, spreads like wildfire, the hardest thing about it is controlling the spread of the d*mn stuff.
Parsley is dead easy too, I've also got spuds, leeks, broccolli, rosemary, chives and basil. I've eaten my onions and carrots. I'm an utter novice, only started growing last spring and i had no trouble with any of it.
