if you make your own breadcrumbs or even buy them how do you get them to stick to the chicken> ?

BREADED CHICKEN

1/2 c. sour cream
1 egg
2/3 c. bread crumbs
1/3 Parmesan cheese
2 1/2 lbs. chicken (cleaned, remove skin)

Blend sour cream, and egg. Blend bread crumbs and Parmesan cheese. Dip chicken parts into sour cream mixture. Dip into bread crumbs. Put into oiled baking dish. Bake at 350 degrees for 45 minutes.

I make my own breadcrumbs. When white bread is close to its eat before date I toast it on a very slow flame on a skillet so that it becomes really hard and brown and then I break it into pieces and whizz it in a blender.

you can go with the egg method (that seems to be popular on here), but I like to go in a different direction that's a little healthier, saves calories, and you can't taste the difference:

Simply use boneless, skinless chicken and toss in a bag with the bread crumbs. If it doesn't stick for some reason, just sprinkle some water on the chicken before putting it in the bag.

Also, add different spices to the breadcrumbs (whether you use homemade or store bought) to add some "character" to the chicken :-) Maybe some Italian seasoning or just garlic powder, salt and pepper. Sometimes I add grated parmesan cheese which is great for making Chicken Parmesan.

Take your chicken pieces.
Take your breadcrumbs (whole meal is best)
Take a beaten egg - last two in shallow dish or plate - separately.

Dip your chicken into the egg.
Dip your egged chicken into the breadcrumbs
Dip your egged, breaded chicken back into the egg
Dip your twice egged, twice breaded chicken back into the egg
Shake off excess and then fry it - but do not be tempted to move it around too much. It needs time to crisp up but without cremation.

Enjoy.

I use the breadcrumbs in the blue tube, they are very good!

1) wash the chicken off with water

2) Dry it

3) get 3 bowls - put flour, a little salt, and pepper (and any other seasonings you like) in one bowl

4) put a couple of eggs in another bowl and beat them

5) put the breadcrumbs in a bowl (or bag)

6) Dip each piece of chicken like this:

a) 1st into seasoned flour, then shake off the excess...make sure to coat well

b) then dip into the egg

c) finally into the breadcrumbs...if youre using a bag, its a bit easier...shake the bag up and coat well, and shake the excess off.

repeat for all pieces of chicken

Bake or fry! It is delicious!

after cleaning and cuting as desired, flour the chicken then dip in egg that has been lightly beatened with a little water or milk added your preference and then either dredge in crumbs or shake in a baggie with crumbs you can re-egg and re dredge if desired for a thicker cover next fry in hot oil either in a pan or deep fried by a frier .Be sure to season the flour , and breadcrumbs to taste salt and pepper and whatever else you might desire such as red pepper or herbs. Some people use rice flour to start but the rule is dry on wet and wet on dry.

There is a lot of techniques in making breaded chicken. You can even put flavoring on it. Like my favorite Breaded Cheese Chicken. But this time, I'll teach you the Basic. Make sure your chicken is not frozen before starting this process.

-Wash your chicken, chop them in 10 pcs.( if you don't know how to chop, have it chop in the market where you bought it ).
- Dry them
- after drying, put some salt and pepper and mix
- let it sit for 20 mins, just to let your salt and pepper absorbed
- Prepare 2 bowls and 1 plate ( 1 bowl for beaten egg, 1 bowl for the flour, and 1 plate for the chicken you prepared )
- Get 1 piece of chop chicken and roll it in the flour ( make sure all surface of chicken is coated with flour )
- Deep and roll the coated flour chicken in beaten egg.
- Back to flour and roll it again. ( I call it double breading )
- Repeat the process for the remainig chicken.

Deep fry in the pan. ( you must have lots of oil in deep frying )

There you are, ready to cook your home made breaded chicken.

u get a chicken fillet dip it in seasoned flour-flour with salt ad pepper eggwash(beaten egg) and then breadcrumbs which u could add seeds to like seame linseeed buy in haelth food shops or nuts eg almonds. or u could add chilli or other herbs like organeo and thyme to give extra flavour. you could also stuff the chicken fillet with garlic butter and then do the same as above. make garlic by adding some finely chopped garlic to soft butter.
when prepared put in deep fat fryer pan fry or grill until golden brown and cripy and white on the inside. you can test with temperature probe 78 degress for 2 mins enjoy

Whip 2 eggs in a bowl.

Coat the chicken with the eggs and immediately coat them with the breadcrumbs.

The way we do it in the catering trade is to roll the chicken in seasoned flour and then dip into a beaten egg mix. Then roll in the bread crumbs. If it isn't suitably coated leave for a short while and repeat the operation.

Before coating in breadcrumbs, try marinading your chicken for a few hours in some fresh squeezed orange or lemon juice, mixed with a tablespoon, (or more) of honey. I will come round and do it for you if you like. LOL.
