Here is the original "Rocky Raccoons" honey lager
courtesy of Charlie Papazain - I always have some of this on hand, it is fantastic and easy to brew:

3 1/2 lbs plain light dried malt extract
2 1/2 pounds light clover honey
1 1/2 oz cascade hops (boiling
1/2 oz cascade hops (finishing)
1-2 pkgs dry lager yeast

add malt, boiling hops, and honey to 1 1/2 gal water and boil for 60 min. add finshing hops, boil 2 more minutes, sparge into fermenter and add cold water to make 5 gal. pitch yeast when cool, bottle when fermentation is complete

Well most beer recipes call for,Water,Sugar,Malt, hops and yeast.Just substitute the malt for honey. The brew will be light colored and sweet. You can experiment and add more hops during the brewing process
