For best result keep it in a vacuum sealed wrap. And. When ready to use allow it to thaw slowly in the refrigerator. Keep in mind that because of the amount of fat in the meat and the overall thickness it will take some time to freeze. And. You want it to freeze as fast as possible. So. Put it in the freezer at a time when the door is likely to stay closed for many hours. Like when you go to bed.

freezing pepperoni is difficult because of its high fat content, so it freezes slower then most other meat products. its thickness can also be an issue, the larger the meat the longer it will take to freeze completely
