Avocado dip or sauce makes a delicious salad, sandwich or other dishes yummy yummy.......

Avocado Dip

Halve 1 ripe avocado and remove the stone, then peel away the skin. Blend the avocado, the juice of the 1 lime, and 1 tbsp of natural yoghurt together in a liquidiser - or mash them together with a fork. The dip can be gently heated before serving but should not be kept warm for too long.

Avocado Sauce

To make the avocado sauce, peel the 1 ripe avocado and remove the stone. Blend the avocado in a liquidiser with the chopped green chili, 1/2 small onion, 1 crushed garlic and 1 squeeze lemon juice until smooth. Gradually pour in 3 tbsp of virgin olive oil while the motor is still running. Taste and adjust the seasoning(salt & freshly ground pepper), transfer into a basin and stir in the last chopped tomato.

and lastly....... it's very good and different!

Avocado "Sushi" Salad
Authentic sushi rolls are tricky to make, but you can enjoy similar flavors in this appetizer, a simple presentation of rice on greens. Use soft lettuce in place of spinach if you prefer.

1 cup rice
1/4 tsp salt
1/4 cup rice vinegar
2 tbsp each lower-sodlum soy sauce and lime juice
4 tsp sugar
1 carrot, cut into 1/4-inch dice
2 small avocados, cut into 1/4-inch dice
24 small spinach leaves

1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, cover, and simmer for 17 minutes or until tender.
2. Meanwhile, in a small saucepan, bring the vinegar, soy sauce, lime juice, ans sugar to a boil. Remove from the heat. Stir into the cooked rice. Transfer the seasoned rice to a bowl and let cool to room temperature.
3. Stir the carrot and avocado into the rice. Dividing evenly, spoon the mixture into four 8-ounce ramekins or bowls and gently but firmly press down.
Arrange the spinach on serving plates and invert the molded rice salads onto the spinach. Serves 4.

Have a look at books by Annabelle Karmel on Amazon, she has great recipe books. Some good ones are variations on: mashed carrots, sweet potato, butternut squash potato and finely grated cheese or cream cheese/creme fraiche mashed avocado & banana combo stewed apple and blueberry (then whizzed in the blender) stewed pear mashed banana I kept small portions of whatever I was cooking aside (cooked with no salt) and put in blender for my kids. When they are able to eat less purreed food just mash with a fork instead.

Beer-Battered Avocado Wedges with Salsa

1 cup lager beer or ale
1 cup all-purpose flour
1-1/2 tsp paprika
2 cloves garlic, chopped finely
2 avocados
Vegetable oil as needed for deep frying
Salt as needed
1 cup purchased salsa

To make beer batter, whisk together beer, flour, paprika, and garlic until well blended. Let stand at least 2 hours. Peel avocados; cut each into 6 wedges.

Dredge 6 wedges in reserved beer batter. Deep fry in hot oil until golden about 3 minutes. Repeat with remaining wedges.
Serve wedges with salsa.

Fresh Avocado and Crab Salad:

On a plate, place some spring mix salad or micro greens. Peel and half a fresh avocado, place on top of greens. Fill avocado halves with jumbo lump crab meat. On the side of the plate I add roasted red pepper strips, Calamata olives, diced hard boiled egg, slices of fresh cucumber, and grape tomatoes. Drizzle the salad with a dressing of 1 part white balsamic vinegar, 2 parts good olive oil, kosher or sea salt, fresh ground black pepper, and a pinch of Old Bay seasoning.

I just had two whole avacados today with some salt....YUM !! I'm not big on cooking with them as I have not taken the time to look up good recipes but cooking.com and simplyrecipes.com have excellent ideas for food and cooking so you might want to start there.

1 whole avacado with 1/2 c. cottage cheese

add some salsa to taste or just diced red onions!

This is the absolute best guacamole I've ever had!

try it with salad. or a sandwich. or you can make guacamole. or even avocado mouse.

3 avocados ripened
1/2 cup of cream
1 lemon juiced
1 lime juiced
pinch of cheyenne

blend ingredients together and voila.

Simple Salsa

2 Roma Tomatoes Diced
1 avocado diced
1/4 c Feta Cheese
Lime Juice to taste
salt and pepper
red onion sliced thin 1/3 c.

serve with fish or chicken or whatever you want CARNAL!!!

UberGuac

3 ripe mashed avocuados
1 plum tomato chopped
lime juice
1/3 jalapeno minced, flesh only
1 tsp salt
1 clove minced garlic
pinch sugar
1 small chopped onion
8 oz sour cream

Mix all ingredients
3 cooked crumbled strips of bacon added just before serving

serve with fav chips

I make a guacamole that is very easy, just mash a nice ripe avocado and add a couple tablespoons of Paul Newmans salsa. It is very easy to make and tastes great with nacho chips or on a taco etc.

My mom used to make these sandwiches...
Slice a avocado, and put the slices on toasted bread with peanut butter. Sprinkle a bit of Miss Dash seasoning, or what ever seasoning you prefer. It sounds really weird, but it is actually really good... Give it a try.
