they are deciding who's territory it is and who's the boss!!

It has to do with territory-theirs. And letting other cats know it. If it goes beyond hissing, it can go to growling. Hissing is really as far as you would want it to go.

The are telling each other off. Get out of my face this is my mom. Get away from that food dish as it is meant for me...just like real children, they are showing their muscle.

It also could be that they hiss at each other when they are scared.

An angry cat can be quite intimidating. Your usually cool cat suddenly crouches, half opens his mouth, draws back his lips, and bares his teeth in a terrifying expression. And then he expels his breath in a loud hiss. It's enough to deter anyone – or anything.

Because the cats usually don't like other unfamiliar cats on their territory....My cat does it all the time with the other cats in the neighborhood.
