It seems like it just gives something to grab on to.

Royce Gracie said it best when he said when he grabs someone for the take down, wearing the gi gives his opponent something to grab onto. He continued by saying he would much rather them grab his gi then to punch him. The gi was giving his opponents a false sense of security.

if you look at the people who wear gi there ethier doing judo or bjj mabe samboyou will find that they wear it to improve their game the can apply more chokes and the could get choked,now in ufc they banned all types of gi . i think that why royce wasnt wearing a gi at the royce vs matt match

I cant speak for all but in the style i train a gi can also be used as a weapon. anothe reason is in grappling disiplines it makes it very hard for your opponet to escape your grasp due to sweat

I would venture to say that they are hardcore martial artists, that would like to stick to the tradition of wearing a Gi when in a competition.

I imagine the promoters encourage them to do that. It's the "martial arts" in MMA that gives it a bit more cachet and respectability than plain old tough guy contests, etc.
