I am making this dish for culinary school, but I need one or two more ingertenets. As a topping on the fries so far I have salmon and holandaise sauce, but I need one or two more west coast(Vancouver) style ingerents. Any suggestions?

What's the deal? The other people who answered obviously haven't had salmon and Hollandaise together. It's a match made in heaven. Good choice!

You might also think about Bearnaise sauce instead of the Hollandaise.

Does dill grow up there? That would be good with the sauce and the salmon. How about one of the artisan cheeses made in your area?

When I think West Coast (and I live here too), I think Asian-Canadian fusion. How about a wasabi mayo topping with a touch of pickled ginger?

If you just want something to go with your other two ingredients, capers are popular with salmon dishes. Mushrooms are another west coast thing that would go with salmon. Fresh herbs would be suitable as well.

Salmon and Hollandaise together????? Having been out to BC not long ago and being Canadian, I know there's a large Asian population. Can you use something from that ethnic food group? How about some shredded apple with maple syrup and a speck of shredded cheddar? Potato pancakes are much like fries so the whole syrup thing really is good!
Does it have to be salmon and hollandaise?

how about something fresh like mushrooms or maybe fruit(BC is the fruit province),what kind of cheese is most used in the area?,I personally don't care for holandaise.
