Ok, so im making this Chocolate cake with fudge in the middle, but i dont have any ice cream or whiped cream. I seriously need an idea because if i dont then it will be the same boring thing....

Caramel

1 cup butter
2 1/2 cups brown sugar
dash of salt
1 cup light corn syrup
1 can sweetened condensed milk
1 tsp vanilla

Melt butter in pan. Add sugar and salt; stir thoroughly. Stir in corn syrup and mix well. Gradually add milk stirring constantly over medium heat till candy thermometer reaches 245ºF.

Remove from heat and stir in vanilla. Put into a buttered 8X8 pan. Cool and cut.

HOT FUDGE TOPPING, Eagle Brand’s

1 cup semisweet chocolate chips
2 Tbsp. butter or margarine
1 (14 oz) can EAGLE BRAND® Sweetened Condensed Milk
2 Tbsp. water
1 tsp vanilla extract

In heavy saucepan, over medium heat, melt chips and butter with EAGLE BRAND® and water. Cook and stir constantly until thickened, about 5 minutes. Add vanilla. Serve warm over ice cream or as fruit dipping sauce. Refrigerate leftovers.

Fresh fruit always looks really nice on top of cakes especially chocolate ones like yours and meringues. For this type of cake I would suggest using strawberries and/or kiwi fruit. Layer your fruit on top of the cake working your way towards the centre. Cut kiwi fruit thinly and in full circles. This tends to work best although i know a few people who substitute the kiwis for mangoes (tinned or fresh it doesn't particularly matter). Sprinkle over fruit a crushed up (done with hands) Cad bury Flake. Enjoy your cake and i hope this helps =)

Cinnamon Coffee Frosting

"My Mom has made this cake frosting for as long as I can remember; she has no idea where she got it but it is very unique and absolutely delicious on a chocolate cake. I now make it for my family and they love it, too."
Original recipe yield: 1 frosting for 1 cake

PREP TIME 10 Min
READY IN 10 Min

INGREDIENTS
1 teaspoon instant coffee granules
1/2 teaspoon ground cinnamon
1 pinch salt
1 teaspoon vanilla extract
1/2 cup butter, softened
3 cups confectioners' sugar
1/3 cup milk

DIRECTIONS
In a small bowl, mash instant coffee with the back of a spoon until powdery. Stir in cinnamon and salt. In a large bowl, beat the butter until smooth, then stir in spice mixture and vanilla. Alternately beat in confectioners' sugar and milk until desired consistency is achieved.

Buttercream frosting: use a half cup of Crisco and stir in two cups of powdered sugar and a tablespoonful of powdered cocoa. Spread that on your cake and then put a layer of cherry pie filling on top of the frosting. Sprinkle a teaspoon of grated orange rind evenly over the top of all of that. Slice 'n serve.

coffee buttercream frosting!

Coffee Buttercream from Epicurious

2 teaspoons instant espresso powder (available at whole foods)
1/4 cup plus one tablespoon water
6 tablespoons granulated sugar
2 egg yolks
1 stick (1/2 cup) unsalted butter, cut into 1/2-inch cubes and softened

1. Stir together espresso powder and 1 tablespoon water until powder is dissolved.
2. Bring sugar and remaining 1/4 cup water to a boil in a very small heavy saucepan, stirring until sugar is dissolved.
3. Boil, without stirring, washing down any sugar crystals on side of pan with a pastry brush dipped in cold water, until syrup registers 238°F on thermometer (soft-ball stage)
4. While syrup boils, beat yolks in a large bowl with cleaned beaters at medium speed 1 minute.
5. Add hot syrup to yolks in a slow stream (try to avoid beaters and side of bowl), beating, then add coffee mixture and beat until completely cool, 3 to 5 minutes.
6. Beat in butter, 1 piece at a time, and beat until thickened and smooth.

German icing
Brown sugar 2 cups
Butter 1/2 cup ( or marg)
cocounut long 1 cup
mix all together, spread over warm or cool cake. put under broiler for a few minutes untill bubbly and remove, let cool for a few minutes, and cut and serve good

While the cake is still warm from the oven, spread smooth peanut butter over the top and sprinkle with chocholate chips til melty, then swirl and let cool. MMMmmmm......

try ganache, it tastes great, everybody loves it, it's easy..and it looks very pretty! sometimes I use a drop or two of peppermint oil or orange oil to give it a special flavor~~ good luck~!

you can always put marshmallows on it right after it comes out and they will melt covering the cake.powdered sugar works also.

my mom used to put plain old raspberry jam. sometimes she would sprinkle some flaked coconut on the jam (I don't bake anything)
