At a Mexican restaurante tonight I had "salsa picosa." I cant find "picosa" in a Spanish dictionary, even under alternate spellings, although there are references to salsa picosa on the Internet.

When I look up "spicy" in an English-Spanish dictionary, it says "picante, espinoso, caliente."

Can someone elaborate on picosa? Why isn't it in a dictionary?

I agree that picosa means spicy. And picante is definitely a more common way to say spicy.
The reason it might not be in the dictionary is that "picosa" is sort of a poetic word. "Picar" is a word that roughly translates to poke or sting. For example, it describes a snake bite or a pins-and-needles feeling. So using "picosa" to describe a salsa would be like saying in English, "It bites!"

Salsa picante = Hot sauce

as in very spicy.

Maybe Mexicans call it picosa instead of picante.
