Reduce your heat and be sure your butter (or whatever you are using) is spread all of the way to the edges. With a good pan, the sandwich should cook evenly. Try a different pan. If it is thin, your food won't cook evenly.

One thing is to make sure you have enough butter in the pan. I find that if you melt the butter and coat the bread BEFORE you make the sandwich, you don't get that burning after you turn.
But, it depends on just how dark you want it in the middle.

I know Alton Brown takes another pan, makes sure the bottom is clean, and puts it on top for a cheap and easy sandwich press. It actually browns more evenly. His methods always work great!
Just turn it over and put the pan back on to brown the other side.
No need to buy one of these sandwich makers!

reduce the amount of butter you are spreading on. I don''t spread it to the edges either. I have perfected my grilled cheese sandwich making into an art form. Also, generally after you make the first one the rest cook faster and may burn a bit if you don't catch it before, or reduce the heat a bit.

Pre-heat pan to low-medium. Butter one side of each piece of bread. Place one slice butter side down with a slice of cheese on it the top with the second slice of bread NON butter side down. Brown for about 1 min or until golden and flip. An alternative method would be a George Foreman grill. Works as a panini press as well for a gourmet grilled cheese. You can also add other toppings such as portabello mushrooms and green and red bell peppers.

Have you used a sandwich maker before? You put the grilled cheese sandwich on it and then press down and it will melt the cheese.

If you make your grilled cheese in an omelet pan you won't have any problem. Start with the pan already heated,low to medium, and when one side is done just flip the pan over and grill till the other side is done.

making a grilled cheese... that's easy, when i make grilled cheese it never burns on the edges, i pressthe middle of it with what ever i use to flip it.

trim the crusts off before you start. The edges burn because they are made of denser bread than the rest, which squishes down and doesn't really rest on the pan.

With the crust gone, all the bread squishes the same, and they can brown evenly.

A chefs expereance here. IT is almost impossible to do this because of how the pans heat. Now if you have a griddle this might work better then a pan and to do this put butter on both sides.
