I would preffer if instead of instant coffee, recipe uses grain or ground coffee. If not, no matter, any recipe is helpful. Thanks!

If you don't have an Espresso machine

Cappuccino

Here's an easy Cappuccino recipe for all those weekend mornings at home when you want to treat yourself to something special AND all you need is a microwave and blender. To brew 2 cups of this coffee you need:

One cup of 1% or skim milk
A teaspoon of sugar
A cup and a half of strong brewed coffee

1) After your coffee has brewed, combine the sugar & milk and heat it in your microwave for 2 minutes at the highest setting.
2) Next, whip the heated milk/sugar mix in your blender for about one minute until it's a fluffy foam.
3) Fill your cup two thirds full with the coffee and top it off with your heated froth.

Ricotta Cappuccino

1/2 cup sugar
1/2 vanilla bean
1 (15-ounce) container ricotta cheese
1/2 tablespoon instant espresso powder
1 (3-inch) biscotti, crushed
Pinch ground cinnamon
Pinch cocoa powder

Place the sugar in a food processor. Cut the vanilla bean open lengthwise, scrape out the seeds, and place them in the food processor with the sugar. Run the machine to make vanilla sugar.
Place the ricotta and espresso powder in the food processor. Blend for 1 minute. Stop the machine to scrape down the sides with a rubber spatula. Blend for another minute. Spoon the mixture into 4 small coffee mugs. Cover and refrigerate for at least 1 hour and up to 1 day.

To serve, top the ricotta cappuccino with crushed biscotti. Sprinkle with cinnamon and cocoa powder.

Cappuccino recipe
3 teaspoons instant espresso coffee
2 cups boiling water
3 cups very hot milk
6 teaspoons granulated sugar
Brandy
Grated sweet chocolate

Combine coffee and water. Stir in milk and sugar. Pour into small demitasse cups. Guests may add either 1 tablespoon of brandy or 1 teaspoon ground chocolate, although neither is traditional.

I do something simlilar to what Steve G. suggests (but I do it every day ).
This is for a single cup of coffee:


... heat about 7 oz of water (I used distilled water) for 2 min 20 sec in my microwave

... put one slightly heaping coffee scoop of very fine grind coffee (I use Melitta in a blue can) in a Melitta filter in a Melitta plastic cone on an extra cup

...pour the water in the cone with the coffee and let it drip though

...add as much sugar as you usually drink in a cup of coffee to the dripped coffee
...then add about 1/8 cup of 2% milk to the coffee

...reheat the coffee in the microwave for about 50 seconds on high

...meanwhile pour less than 1/8 c of skim milk (cold) into your "real" final cup, and use an inexpensive frother** to froth the cold milk (skim milk works better than milk with fat for some reason)

...quickly pour the reheated coffee into the cup with the frothed milk

(this is tasty stuff and reminds me a lot of regular cappuccino... I start with reasonably strong dripped coffee which stands up well to the extra milk additions)


**you can buy a battery-powdered frother for about $10 at Bed Bath and Beyond, or for about $2 (not a misprint) at Ikea if you have one near you (or perhaps from their catalog)... well worth the few bucks!

Two years ago Bialetti, which is an Italian brand for coffèe machines, put on the market "mukka express"....a good way to have your own cappuccino at home! Visit the website www.bialetti.it (caffetterie/alluminio). It works!!!!!!
