I have some eggs, tomatoes, onions, mushrooms, cheese, and I dont know what to cook

Onion-Pepper-Mushroom Frittata

Ingredients
6 lg eggs
1/4 cup milk
1 tspEach: minced basil, oregano, and thyme
1/2-1 tsp.Seasoned salt
Dash of pepper
1Medium onion, chopped
2Bell peppers, seeded and diced
2 oz.White mushrooms, sliced or what you have
1-2 oz.Shredded, cheese, any kind
Preparation
In bowl, beat eggs with skim milk, basil, oregano, thyme, salt, and pepper until frothy and light. Meanwhile, in a small pan coated with cooking spray, saute onion until limp and golden, set aside. Coat inner surface of non-stick, ovenproof, 10-inch skillet with cooking spray. On stovetop, heat to medium . Add egg mixture.

Cook, using a spatula to loosen and push down sides of frittata as with an omelette. Do not scramble. Cook until almost done, leaving egg mixture slightly runny on top. Top with reserved onion, diced peppers and sliced mushrooms. Sprinkle shredded cheese evenly on top.

Place skillet with frittata in midoven, under broiler, at least 6 inches from heat source. Remove when cheese is melted and top of frittata is golden. Slide onto hot platter or warming tray. Cut with sharp knife or pizza cutter.

We stayed at the Marriott in Ft. Lauderdale, and they have an incredible buffet. They actually have a mushroom station! You can have a variety of mushrooms (shittake, porcini, portabello) with your choice of three different kinds of sauces- an alfredo type sauce, a marinara (layer sauteed mushrooms over hot polenta and cover with sauce) or a marsala wine sauce. The point is, you can make a really tasty dish using mushrooms as the main ingredient and come up with dozens of different recipes. Remember, the uglier the mushroom, the tastier it is!

Bacon-Wrapped Mushrooms With Honey-Barbecue Sauce:

Prep: 15 min., Cook: 4 min., Grill: 10 min.

24 small fresh mushrooms
12 bacon slices
1 cup Honey-Barbecue Sauce

Wash mushrooms thoroughly. Cut bacon slices in half crosswise, and microwave, in 2 batches, at HIGH 1 1/2 to 2 minutes or until bacon is partially cooked. Pat dry with paper towels. Wrap each mushroom with a bacon slice, and secure with wooden picks. Dip wrapped mushrooms in Honey-Barbecue Sauce.

Grill mushrooms (using a grill basket, if necessary), covered with grill lid, over medium-high heat (350° to 400°) 4 to 5 minutes on each side or until bacon is crisp and thoroughly cooked.

Yield: Makes 8 appetizer servings
