I cannot absorb it very well in the foods I eat.

Try lecithin - you can get this from any health store in capsule form or granules. Lecithin is a fat emulsifier and will help you break down and absorb the fat in your diet and helps keep good cholesterol (HDL) levels up. I would consider taking a multivitamin and mineral supplement that contains the fat soluble vitamins: A, D and E as a minimum. If you don't absorb fat very well then you might get low on these fat soluble vitamins and that can impact on your mineral levels too so a multi would be a good idea.
Chew your food slowly at mealtimes and don't have drinks with meals - this should add some improvement to you digestion.

You'll prolly b fine, it is always better to have a deficiency of cholesterol, that way you can eat all the cholesterol rich foods that u want.
