The 'white stuff' is albumen - a protein more recognizably associated with egg white - and indicates that the chicken is overcooked. It will also appear on other 'white' proteins that are overcooked such as fish and pork.

Now assuming you are talking about batter dipped chicken....and you are talking about the drippings from the batter.....after you remove chicken from oil....make sure all of the crumbs are browned....pour off all the oil except for 3 tbls.....leaving the crumbs in bottom of skillet....
Add 2 tsp dry minced onion.....salt and pepper....and 3 tbls flour.....Cook over med heat until a lightly brown pasty mixture....pour in 3 cups cold milk.....stir continually....you'll have a delicious white gravy to pour over creme potatoes or biscuits....absolutely delicious!!!!!
If you are talking about the white puffy looking junk.....yuck....throw it away.....not good for anything.
