what's the maximum amount of amps that I can load per leg in the secondary 208 volts if the total capacity of the transformer is 75kva= 208 amps ?

Your kva remains same in primary and secondary
Primary current = 75000 / [(sqrt3)(460)] = 94 amps
Secondary current = 75000 / [(sqrt3)(208)] = 208 amps

Your continuous rating is 208 amps >> load 208 amps for continuous operation; but it is a good practice to load 80% capacity = 208 x 0.80 = 166 amps

You can overload the transformer as per IEC standards (IEC 354 and IEC 76) or manufacturer's recommendations
