I like to use the cornbread mixes because they're convenient, but they always seem a bit dry. What can I do, what can I add? Keep in mind that I'm at abou 7,000 ft in altitude if that matters.

You can always add butter to the recipe to make it more moist. Other than that, you can add Creamed Corn for yummy flavor. Just be careful doing that, because you may make the mix too wet. It will take some trial and error.

hi there; high -altitude cooking would be a snap if only there were a magic formula for converting all recipes.Unfortunately' since ingredients and proportions vary by recipe,no such formula exists. If you live more than a 1,000 feet above sea level, your best bet is to become familiar with how altitude affects food, then experiment with recipe ingredients and amounts to find the balance suitable for your location. Measure amounts carefully and keep a record of the amounts you use and the results you achieve each time you cook. I hope that i helped you out a little.. Also don't over mix your batter this can cause it to dry out..Good Luck

I add a little maple syrup to cornbread mixes. You can also add a shallow baking pan filled with water to the oven while you cook the cornbread. This will make the air in the oven humid and add moisture to the cornbread.

Hot Oil!!!!

while you mix cornbread....pour 2 Tbls oil into skillet and heat in oven.....when you have mixed the bread thoroughly...pour in hot oil...stir quickly and pour into hot skillet....Makes bread great!!!
Don't mix batter then leave sitting for oil to heat....when batter sits it gets thick and pasty
2 cups cornmeal
1 egg
milk --- enough to make thick pourable batter
2 Tbls flour
hot oil
cook in iron skillet at 400 degrees until golden brown

I always add a table spoon or too of mayo or salad dressing it comes out moist and the hubby never knows either...hehehe

I would add more butter and take out the oven a little sooner than you normally do.

Try adding two more tablespoons full of milk to the batter.
