You want to cook it on high heat. So, either grill it or use a pan on the stove. If you use a pan, you can use a bit of cooking spray if needed. Do NOT add water to the pan, or you will steam your pork chops. Yuck! You need it to sear and brown, not just cook, for it to taste best.

I use a 12-inch cast iron skillet. Pour in a tablespoonful of oil - I prefer Canola oil. Heat the skillet until a drop of water sizzles away quickly. Add the pork chops one at a time in a single layer. Let them fry for four minutes and turn them over. Let them fry another four minutes, then add enough WARM water so that it comes halfway up the side of the chops. When the water boils, reduce heat to a simmer and let 'em cook five minutes, then turn them over and let them cook another five minutes. (This is for chops 3/4 to an inch thick). Remove from skillet and serve, topping each chop with two tablespoons full of warm apple butter.

If you're doing them on the stove I would actually cook them in a frying pan with a little water. You can use oil but water works just as good and is less fattening. I do it with chicken breast all the time. Use heat between low and med so they don't cook too fast. Put a lid on them and check every few minutes. If the water dries up add a little more. They will be nice and tender.

Pan fry them stovetop with a little oil and butter. Let the pan get really hot first, then add the oil and butter, then the chops. Give them about 4-5 minutes on each side for 1-inch thick chops.

They're also good broiled in the oven about 4-5 minutes per side. Just rub them with oil and lightly coat a foil lined baking sheet with oil.

ENJOY!

I use a little oil and fry them with onions and potatoes which have been boiled for about five minutes. Pork cooks fast and will probably be done in about ten minutes. Just cut through one and if the pink is gone it is done.
