1) Beets/chard. You can eat both the root (beet) and the leaves (swiss chard).
Actually you could answer this from just one genus, Brassica. Brassica rapa: 1) broccoli and 2)cauliflower (flowers and stems), 2) Turnip (root), turnip greens (leaves), 3) Cabbage (leaves), Brassica hirta: 4) mustard seeds (reproductive organ)
Saffron - the styles (part of the pistil) of Crocus sativus

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are wrong. Some of the fresh vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

Broccoli...bud; artichoke...flower; rhubarb..vegetative portion (botanically it is a vegetable); corn..seed. If you don't like rhubarb as a type of vegetable then substitute beet as a vegetative stage. Oh, and another possibility there is spinach.
I wanted to stick tomato in there as a fruiting body, but botanically it is a fruit, and you asked about vegetables.

Onions - eat the green leaves when the plants are young; eat the bulb when it's older.
Pumpkins -- eat the fruit in pumpkin pies; eat the toasted seeds.
Squash -- eat the blossoms dipped in batter and deep fried; eat the fruit later.
Radishes -- eat the sprouted seeds in salads; eat the radish roots later.
