We experience time as change. If nothing ever moves or changes, time as meaningless. But change suggests impermanence, a flow and ebb of things. By definition, "God" is the "Supreme Being", omnipotent and unchangeable. Mortality is a function of time and vulnerability. A being with absolute power would not be vulnerable, or changeable.
"Immortality" as a concept does not work well in the physical universe. Every living thing eventually dies. Even inanimate objects wear out and are destroyed or transformed into something else: books, cars, buildings, canyons, planets, stars, galaxies. So "God" has to be operating outside the bounds of space and time.
We can't conceive of that because we're on the inside. We ask, "what was there before time?" because nothing else makes sense, but on the outside, "before" doesn't mean anything. "Time" simply is, all at once, all "now", all visible to God. God does not sense the passage of time but can observe (and comprehend) the effects at all points simultaneously.
So God is not enduring "eternally". God simply is. But from inside the temporal universe, we can only encounter God one moment at a time.

I'll answer your original question...but I must clarify the terms being used. Immortality is a characteristic of time. In other words, God is immortal in time, and eternal outside of time. To answer your question of why? In those terms, time is a creation of God and God is within all of creation, including time. In that dimension He appears as an event, since events exist in time as objects exist in space.

Not 'immortal' (can't be killed); 'eternal'
Think of it as being outside of time. How you might explain to a fish that asks why you aren't wet.
God created time so he is outside of it and unaffected by it. It's a hard concept for people to grasp. Time is a dimension like length or breadth. Just as God is outside the physical world, he is also outside the temporal.
