I am an omnivore and almost every one of my friends eats meat; my dad does not think it is a meal unless it has meat (I don't think that this is unusual).
But I LOVE this recipe and so does everybody else
and I love surprising people after they have raved how good it is by telling them it is vegetarian.

LASAGNA WITH ZUCCHINI, RED PEPPER AND MUSHROOMS
Preheat oven to 350 F (180C). 13”x9” (3L) baking dish spray with non-stick vegetable spray
9 pre cooked lasagne noodles
1 tbsp veg oil
1 ½ tsp crushed garlic
1 c chopped zucchini
1 c onion
1 c diced sweet red pepper
1 c sliced mushrooms
2 c tomato sauce
540 mL (19 oz) crushed tomatoes
1 tsp dried basil
1 tsp dried oregano
1 ½ c 2% cottage cheese
½ c 2% milk
½ c grated Parmesan cheese
8 oz shredded mozzarella cheese
In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.
Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.
Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.
Pour remaining sauce over top; sprinkle with mozza cheese.
Bake, uncovered, for 30 minutes or until hot. Let stand for 15 minutes before serving.

Sweet Potato Curry
Ingredients
1 large sweet potato
1 large onion
1 clove garlic
1 teaspoon curry paste or mixed curry spices
1/2 teaspoon turmeric
1 teaspoon vegan bullion powder
100ml sweetened soya milk
sauce flour
vegetable oil
Peel and finely chop the onion and garlic and fry gently in the oil until they start to brown.
Mix in the curry spices, turmeric, and vegan bullion powder and set aside.
Peel the potato and cut into chunks and boil for 10 minutes.
Then strain and add the onion mix and stir in the milk.
Put over a low heat and add some sauce flour. Add it 1/4 teaspoon at a time until it is the consistency that you require.
Serve with rice.

Homemade tamales. They're tons of work to assemble, so I usually save making them for when company comes over. Plus, it's always a big crowd pleaser. Served with seasoned spanish rice and a corn and tomato salad.

rolled chicken tacos or chicken enchiladas. boil boneless/skinless chicken breast. ( i find pks of boneless/skinless on sale sometimes) when i boil the chicken i usually put love of garlic, salt, pepper & oregano & a celery stalk when I boil it. remove chicken from water it was boiled in & cool & shred. roll in corn totrillas & deep fry if you want you can use tooth picks to hold the tacos (or flautas as they are also called) serve with salsa (canned tomatoes, green onion, garlic oregano, cilantro & chili tepines in a blender) lettuce & cheese also with beans & rice. u can use the rolled chicken tacos to mak green chili enchiladas. i fry al lot of the tacos & line them in a baking dish. then in a bowl i put 1 full small can of cream of mushroom & cream of celery soup if small batch I use 1/2 can of each or sometimes only 1 flavor. mix with 1 or 2 cans of the chicken broth, 1 8oz container of either plain yogurt or sour cream & about1 1/2-2 cubs of diced green chilies. bake for about 40 minutes @ 350 degrees remove from oven add grated cheese & sliced olives. put back in oven for about 15 mins. more to melt cheese

fettucine alfedo
box of fettucine ( or u could use any other pasta if u like
pt of heavy cream
2 tbsp cornstarch
1cup parmesan cheese
pepper to taste
cook pasta by box directions combine cream, cornstarch, parmesan cheese, simmer till it becomes slighty thickened. add pasta to alfredo sauce and cook 3-5 minutes
plate and enjoy

Sweet 'N' Sour Pork Chops
1 can (8 1/4oz) chunk pineapple in syrup undrained
1/4 C. cider vinegar
1 medium green pepper, cut into chunks
8 pork chops 1/2 inch thick
1 envelope Shake 'n Bake barbecue seasoning and coating
Heat oven to 425 degrees.
Drain pineapple, reserving syrup. Mix vinegar and 1 tablespoon of the syrup; set aside. Mix cornstarch and remaining syrup in medium bowl until smooth. Stir in pineapple and pepper. Pour into 13x9 inch baking pan.
Moisten pork chops with vinegar mixture; shaking off excess liquid. Coat as directed on package. Place on pineapple mixture. Bake 25 minutes or until cooked through. Serve with pineapple mixture.
**Sweet 'n Sour Chicken: prepare as directed above, using barbecue recipe for chicken and substituting and boneless skinless chicken breast halves for pork chops.
Hash Brown Casserole
2lb hash browns
1 can mushroom soup
8oz sour cream
salt & pepper
1/2 can evaporated milk
1 can chicken soup
cheese (cubed) to taste
onion (optional)
Bake at 350 degrees for 1 hour, Stir after 30 minutes and add Ritz crackers crumbled and 1 stick margarine. Return for 30 more minutes.
Enchilada Pie
1 package frozen corn tortillas
2 onions
2 cans enchilada sauce
2lbs ground beef
1lb Colby cheese (grated)
Brown beef and onions until done. Line oblong 9x13 cake pan with tortillas. Put 1/2 beef mixture on, then 1/2 cheese. Repeat layers. Pour sauce over all and bake at 350 degrees until bubbly and cheese is golden brown.
Cherry Coke Salad
Dissolve 2-3 packages strawberry Jell-O in 1 1/2 C. boiling water. Add 1 can Coco Cola. Stir in 1 can (21oz) cherry pie filling. Chill until set. If you like Cherry Coke, you'll love this, plus its quick and easy.
Party Rye
2lbs of sausage
2 1/2 teaspoon Italian seasoning
1 teaspoon galic powder or salt
2lbs of velveeta cheese
1 tablespoon Worcestershire sauce
2 loaves of party rye bread
Fry and drain sausage. Melt cheese, add seasoning and meat. Spread on cocktail rye bread. Place on cookie sheet and freeze. Then remove and put in bags and put back in freezer. Bake at 250 degrees for 10 minutes or until heated through.
