IF it were air contact that caused the hardening, wouldn't the bottle harden when you open it to pour out?

It "freezes" when it hits the coldness of the ice cream. Thats why the bottle says Do Not Refridgerate.

The hardening happens from the exposure to air and the coldness of ice cream.
