If your not putting meat in the Lasagna you can make a side of Sausage, peppers and onions, an antipasta salad, with provolone, Genoa salami, pepperoni, artichoke hearts ( progresso jarred ones are the best ) and mozzarella, olive oil, and vinegar, ( balsamic or red wine are the best ) You could have different breads, like traditional Italian breads, Rosemary Focaccia, and Sesame sticks to name a few. Good luck I'm sure that what ever you do will be a hit. :)

A colorful salad will balance out the lasagna very nicely. You won't need anything else.

Make sure your salad has green (salad greens), red (tomatos or bell peppers), orange (mangoes, oranges or bell peppers) black (black olives), and yellow (lemon vinegarette, bell peppers or squash).

The lasagna has the carbs and protein. The salad will provide all of your fruit and vegetable requirements.
