I do the same thing from time to time. Here are two suggestons that are tried and true:
1. After the noodles are cooked and before you add the milk & powdered cheese stuff, add 1/2 container of sour cream, then adjust the milk a little to keep it from becoming too runny. The dish will be much creamier and tastier!
2. When the whole dish is complete, stir in salsa and ground beef, place in oven proof dish and cover with shredded cheese. Bake until cheese is melted and then sprinkle crunched up tortilla chips on top. It makes a great mexican cassarole!

You did get some great ideas. I can't wait to try some of them myself.
Sometimes I slice up some black olives and/or some mushrooms and put them in my box mac and cheese. Parmesian is always good. And cutting up just a little Velveeta cheese or a couple of spoonfulls of cheese whiz (the kind in the jar) make it taste so much smoother and creamier.

Bits of ham and peas are always a bonus. Another idea is adding carmelized onions and bacon. Dump the macaroni mix into a oven safe dish, add crushed saltine crackers and dots of butter to the top and slide it into a 375 oven for about 15 minutes. The top will get crunchy and golden. It's really good and really easy.

Try a different kind of cheese, cream instead of milk (just a little though), paprika and a little bit of parsley, chopped ham, pork or chicken, crumbled bits of crispy bacon, broccoli.
You can also try not using the cheese sauce--try alfredo sauce, olive oil & garlic, or spaghetti sauce with ground beef.
Have you tried Hamburger Helper or Lipton Noodles and Sauce instead of Mac & Cheese?

Make it according to the package directions, but add about 1/2 again as much milk as it calls for. Then put it in a baking dish, top with grated cheddar cheese and bread crumbs---bake it til the top is melted and crispy.

i see that you've gotten some good suggestions already. you might also want to check kraftfoods.com. type in mac and cheese in the recipe search, and you'll get a number of options. you can also sign up for their recipes, and then they'll start sending you their food and fun magazine (free), and this has great recipes.

oh, i know some ways.....
1) cook hot dog and cut it in 1/4 inch slices and mix it in.
or
2) when the mac and cheeze is almost done, add some motsorella cheese. when mealted it will be tasty and stringy with melted motzorella cheese.

At the grocery store next to the kraft parmesan cheese that you can sprinkle theres also a cheddar one - that on top of macaroni is really really great it adds a lot of flavour.
