Parmesan chicken breasts. Roll chicken breasts in melted butter or margarine. Then, roll in mixture of bread crumbs, parmesan cheese (the kraft kind works fine), paprika, and salt & pepper. Then just bake until chicken is done! It's super easy and simple and really really good.

Crockpots have awesome meals that you start in the morning (throw everything in) and let it slow cook all day. That way pretty much no matter what time you get back the meal will be ready and not over done.
If you dont have a crockpot you could pre cook some pasta and sauce so everything just needed to be heated up before you eat.
Thats all i got for now

ingredients:
1 pound skirt or flank steak
Salt and pepper
4 cups chopped red leaf lettuce
1 cup watercress leaves
1 cup bean sprouts
1 cup diced tomatoes
1 cup diced cucumber
1/3 cup chopped scallions
1 cup peanut sauce
2 tablespoons fresh lime juice
1/4 cup chopped dry roasted peanuts
Instructions:
Season steak with salt and pepper. Place in preheated grill pan that has been sprayed with cooking spray. Sear on each side for 2 to 3 minutes for medium-rare, or cook to desired degree of doneness. Remove from pan and let rest before slicing against the grain on the bias.
Place lettuce on 4 individual plates. Top lettuce with watercress and bean sprouts. Top with steak slices, tomatoes, cucumber, and scallions. Set aside.
In a small bowl, whisk together peanut sauce and lime juice. Pour mixture over salad. Top with steak and sprinkle peanuts over top just before serving.

This may be a southern thing, but sometimes we have breakfast for dinner. Whip up some waffle batter. You can also stuff french bread with browned sausage and velveta (throw it in the oven for a few minutes that night on 350). Make scrambled eggs, hashbrowns, muffins etc. All of those things can be prepared before hand and put in the oven that night.
