it should freeze as well as a western chili would. try freezing a small amount & thawing it out later to see if the consistency changes too much for you. also, once thawed you may need to re-season as some spices/herbs lose flavor in the fridge.

Absolutely. It is best if you freeze it as soon as it cools right after you cook it but if it has been in the fridge for a couple of days that is OK too. Leave some room in the freezer container because things expand when you freeze them.Sounds good! Enjoy!

Yup...I do. Don't overcook 'em when you heat 'em back up or they'll get disgustingly mushy.
