i would defrost it first

It's best to defrost it first or you could end up with a solid lump cooked on the outside and raw and still cold in the middle. Unless you cook it long and slow, in which case why buy mince.

When I buy mince I divide it into portions and freeze it, then when I want to use it it doesn't take so long to defrost.

It depends if you have brought fresh mince and frozen it or frozen, bag mince. If it fresh then i suggest defrosting first but if it is the bag stuff then I think they make it so that it can be cooked from frozen. Its easy enough to defrost in the microwave if you're not willing to wait!!

In a suitable container place it in a microwave and turn on the defrost cycle...Solid frozen 1kg takes 45 Min's in my microwave

If it's fresh mince that you have frozen then you will have to let it defrost, however you can buy frozen mince in the freezer section of most shops that you can cook from frozen.

No need. Put it straight in the pot. Mash and stir vigorously with a wooden spatula (at a high temp). After about 5min of this you can stir in chopped onion, garlic, dried herbs and a tin of tomatoes with some stock/water and puree, turn down the temp, and let it simmer gently about 2 hours for a ragout for example. It is not the same as roasting frozen turkey because the mince being in particle form is completely cooked to a safe temperature.

It depends on what you`re making. If I forget to defrost something I`ll make mince with onions and carrots over mashed potatoes.

YES any form of beef you can cook from frozen. If your doing something like a bolognaise than cook it slowly for a while until the meat is defrosted....but any beef is easy cooked from frozen, I cook my beef joints fro partially frozen & that way I achieve perfect pink roast beef.
