Usually, the fruit in water in the fridge will last longer, because it is cold and air isn't getting at it and it is not losing moisture.

In a room at room temperature, the fruit is subject to air and drying out.

leaving outside depends on outside environment. Hot...rots quicker, attracts bugs, if it is cool it can last longer than inside, but cold it could freeze and immediately ruin the fruit.

If you put dried fruit in water it will absorb water. If you leave fruit out slowly it dries up. Fruit does exchange water with the environment. Osmosis says that water will move to a place of lesser concentration. If a fruit is left in water it will mold faster.
