Without the shedding of blood there is no remission of sins.
Also, the sacrifice had to be spotless, clean, etc. The righteous had to pay for the unrighteous. Animals were innocent, not rebelling against God.
The High Priest performed the sacrifice for the sins of the people... Jesus Christ gave himself to be a sacrifice for our sins, in His humanity. He obeyed God even to suffer the cross for us. Because He was sinless, He raised from the dead and so we also will raise up to be with Him. Jesus Christ is our High Priest forever after the order of Melchizedek.
A new thought came to mind, that the sacrifice was roasted and was food for the priests. It smelled good, and probably tasted Good. Jesus said to eat this bread that it is His body that is broken for us. He also said to drink of this fruit of the vine, that it is His blood that is shed for the remission of sins for many.

God has decreed from the beginning, from the time that Adam and Eve were expelled from the Garden of Eden that there can be no atonement of sin without the shedding of innocent blood. This is reintegrated in the New Testament. When God clothed Adam and Eve in animal skins he was teaching them about sacrifice and he was also forgiving them their sins. The animals used were without blemish. God was never satisfied with animal blood; therefore, he offered up his only begotten Son as a complete sacrifice, to be given once and for all and for all time. Animal sacrifice is, therefore, no longer necessary because Jesus has fulfilled the perfect requirement of atonement, an atonement that God is satisfied with. God must be satisfied only once, which is why when a sinner takes Jesus into his heart his sins are forgiven him----he is washed in the blood of Jesus and this satisfies God as to his fitness to enter heaven. Christianity is so simple, but most people reject this simplicity for the complexity of heathenism, a complexity that leads to eternal damnation. There have been cultures in which humans have been scarified, such as babies and virgin girls, but this is an abomination to God because human kind is precious to him. This is why Jesus came to earth to be the sacrifice----he did what only God could do. Only Jesus was perfect enough to satisfy God.

Our Creator never commanded anyone to kill any of His creatures. Isaiah 66.
It was a pagan tradition that works. They put their hands on the animal, invoked words of power, that drew negative energy
from the person into the animal. Then the animal was destroyed releasing the negative energy to the Cosmos.
This actually pollutes the lower level of the Astral. And is why
the spirit that lived as Jesus Christ had to come and purge the
Earth and Heaven of this negative energy with His death.
"Without the shedding of blood there is no remission of sin."
Hebrews says, "WE have not yet resisted unto blood!"
Blood is a symbolic term for ones personal spiritual power.
We have cut ourselves off from the Creator and selfishly hang
on to our energy, along with all the resentment, anger, and
pain therein. We have to release these negative energies in order to get to Heaven. Because they simply cannot exist where
Christ will take us.
The Creator does nothing in vain. That is why many will have to go through a period of suffering, in order to purge their spirits
of these negative energies.

I don't know why killing an animal would atone for sin, but PERHAPS it is the symbolism of it. By sacrificing your best animal in your herd, you are obviously showing how serious your repentance is. Anyone can say "I'm sorry" but giving our most valuable asset goes a long way to prove it......... So I guess it was just a way of the people giving the best they had, and in the New Testament it is God giving the best he has for our sake.

It was preparing people for the Savior.
The idea of the substitutional sacrifice of animal blood in place of humans.
The blood of Jesus is what paid for our sins.
The life is in the blood.
Hebrews 9:22
(22) And almost all things are by the law purged with blood; and without shedding of blood is no remission.

This illustrates to Man,He can never be acceptable to God by his
good works,Back to Adam,His "Religious "act" Church of the Fig Leaf" God didn"t accept,so an innocent lamb,had to die,Blood
shed for Adam.Jesus was the innocent Sacrifice required for
Man"s Sin.Man didn"t pick any lamb,It had to be perfect,also
man had to keep lamb at his house,5 days,every family would
get attached to it.This is how much God Hates Sin.

because human sacrifice is disgusting.
sacrifice means giving up something of value and in that system, animals have value. If someone has no animal, and can't afford to buy one, one may make a meal/grain offering. at a lower economic level, grain has worth and is therefore a fine sacrifice, as is wine or oil.

Why "would"?
Do you mean why "was"?
I am not sure I know the answer to "would" . . . but why "was" it required? Because God said so. The animals were a shadow of the coming Christ who would sacrifice once and for all. This also was because God said so.
The Bible does not explain a lot of things like a defendant in a court room . . . it explains what it wants to explain for the purposes of the court!

Before Jesus died for us that was the only means of atonement.
Hebrews 9:22 In fact, the law requires that nearly everything be cleansed with blood, and without the shedding of blood there is no forgiveness.

It was done for the atonement for sin.
Sin leads to eternal seperation from God, Slavery (to sin itself) and death (spiritual and physical)
Because of the vile nature of sin, blood has to be shed (in order to symbolize the horror and wages of sin). Hence, the sacrifice.
Well, it was not as a result of any pagan or vile rituals that animals were sacrificed, if that was what you were wondering
