Use a cake leveler! You can buy one for around $3 at any store that sells cake decorating supplies -- like Wal-Mart, Hobby Lobby or Michael's. I have one and it works perfectly every time -- you really get professional results with one little tool. Try it!

Here's a simple trick I got when I was taking Wilton decorating classes. Use either dental floss, or heavy string. Line the string up at the edge of the cake, and pull tight. Use 1 hand to guide the string or floss around the cake and use the other to steady the string. You should end up with a nice clean cut.

go to Michael's or your local baking supply co and get a turntable
Get a knife that is bigger than your cake - a 12" bread knife works well
Place the cake on the turntable , hold the knife level and rotate the the turn table into the knife until the cake is cut in half.
The turntable is also almost required for decorating cakes . Yes you can do it w/o using one , But why ?

longer blade, yes, but also try the cheaper toothpick method (instead of a leveler)--insert the toothpicks staggered around the cake to guide your slice. cut about 2-3 inches toward the center from all directions. then use cheese wire or dental floss to pull across the cake.
**this works well for dense cakes, but I've never tried it on something particularly airy.

The least expensive way to do it to buy two pieces of PVC pipe that is the diameter of the thickness in which you'd like your cake slices to be.
Lay the PVC on either side of the cake and use them as guides as you split the cake.
Also, a long seraded blade is best.
