I know as a chef I would need to have a strong palate, and I wanted to know if there are any ways to make it more aware of different tastes and flavors and such. Thank you!

What you really need is an EDUCATED palate. Experience is power in the food world. Start experimenting in exotic recipes that you've never heard of before so as to eliminate things you are sure you don't like or don't want to use in your repetoir. Try everything you can get your hands on. Too bad most of your research will take you to wonderful market places & restaurants & discovering wine that will make you palate WISE! LOL LOL

Try lots of little bites. Even if you don't think you'll like it. Seriously. Somehow your brain will shut off the "Eww, ick" and think "This goes really well together" even though you wouldn't eat it yourself for dinner. A bite of something here and there for tasting helps you learn flavor combos. You don't have to like it, but it helps you cook for other people with different palates than yours.

If you smoke, stop. Smoking limits your tastebuds. If you drink lemon water between bites that helps clear the palate for a new taste.

don't smoke cigarettes and just eat! try eveything at least once and enjoy the food with each bite, don't just stuff your face.
