I like Granny Smith apples for cooking. Contrary to what the above person said, they are a TART apple. But if you have applesauce heres an easy one
Apple Cinnamon Pancakes
(2 servings)
1 cup unbleached all-purpose flour
1 Tbsp. sugar
2 Tbsp. baking powder
1/8 tsp. salt
1 cup vanilla soy milk
2 Tbsp. vegetable or olive oil
1 tsp. ground cinnamon
3 Tbsp. apple sauce
1/2 tsp. pure vanilla extract
Combine the flour, sugar, baking powder, salt, and vanilla soy milk in a bowl and mix thoroughly.
Mix in the ground cinnamon, apple sauce, and pure vanilla extract until smooth.
Pour about 1/2 cup(if you like big thick pancakes)on to hot, oiled griddle. In about 2 minutes bubbles will appear on the upper surface of the pancake, flip the pancake with spatula. Cook for another 2 minutes.
Tastes great served with maple or fruit syrup.

Depends on what you want to accomplish. Is it holding up to the heat of cooking, or is it the overall taste? The one answer before me said that Granny Smiths' are sweet. They are not. They are the green tart ones you buy for pucker power. They do hold up well in baking however, and are generally used for pies. Delicious are great on their own, but a bit tough in a pancake recipe, they cook down a bit chewy. Pippin is a good blend of texture and taste, Pink Lady is super sweet and juicy. Good luck. If worst comes to worst, go get a can of prepared apples, already cooked and canned for pies in the baking section of your grocery store.

Dark Green Spartans of course. They are crunchier, tartar flavour, much tastier that other apples. 2nd best would be the Granny Smith Green or Goldens almost as good as the Spartans! I use Granny Smith when I can't
get the Spartans!

i would have to say, granny smith green apples, because they have a little bit of tangyness to them and it might make the pancakes taste better.
