it depends on what vitamins they are. if you don't get enough protien you hair can fall out. if you don't get Vitamin C you imune system can be compromised. if you lack Vitamin B12 its bad for you heart if you lack Vitamin B6 its bad for you digestive track. the best thing if you don't eat a healthy diet(which is almost imposable) is to take a multi vitamin
