Playful wrestling and stalking is normal cat play behavior - and training for hunting - but if someone is getting bloody, then this is beyond normal play and he is being beaten up by the others. In normal play, cats withhold their claws and teeth to avoid huritng each other - it may look rough but no one gets hurt. You may need to find a new home for either the bully cat or the one that is getting beaten up.

I have 3 cats as well and they are always play fighting. It looks bad and there are a lot of those terrible yells and screams. However, no one ever gets bloody. There are a few scrapes and bumps, but never any blood.
I think that if there's blood there's a problem. Consult your local vet immediately.

It's what they do. It may look rough to you but it's probably not for them. If it got too rough, they would let each other know by squealing or cry out in pain. That is most likely why kittens bite and scratch people, they don't know it hurts us unless we let them know it hurts.

They play rough because it keeps them intertained. If there is one who always end up being the that is cut and bleeding, then the other two are bullies.
