Oatmeal Raisin Cookies Yield 5 dozen

1 cup butter or margarine
1 1/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
2 Tablespoons milk
2 teaspoon vanilla
1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 1/2 cup oatmeal
1 cup raisins
1 cup chopped nuts, optional

Cream butter and sugars. Add eggs, milk and vanilla, mix until well blended. Sift all dry ingredients, except oatmeal, slowly add flour mixture to wet ingredients until well blended. Add oatmeal, raisins, and nuts if using them. Preheat oven 350 degrees. Scoop or spoon dough onto lightly greased cookie sheets. Bake 12 - 15 minutes until lightly browned.

MOM'S OATMEAL RAISIN COOKIES

1/2 cup Quaker Old Fashioned Oatmeal
2 1/4 cups all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup (2 sticks) butter, softened
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon lemon juice
2 eggs
3 cups chocolate covered raisins
1 1/2 cups chopped pecans

Mix 'n' match:

Substitute chopped dates or chocolate chips or plain raisins for the chocolate covered raisins in these cookies
Substitute walnuts for the pecans

Preheat oven to 350°F.
Cover 2 baking sheets with parchment paper. Place rolled oats in blender or food processor and process until finely ground. Combine ground oats, flour, baking soda, salt and cinnamon in a mixing bowl.

In another bowl, cream butter, sugars, vanilla and lemon juice together using an electric mixer. Add eggs and beat until fluffy.

Stir the flour mixture into egg mixture, blending well. Add the chocolate covered raisins and pecans to the dough and mix well.

Using 1/4 cup of dough for each cookie, scoop round balls with an ice-cream scoop and place 2 1/2 inches apart on prepared baking sheets.

Bake until cookies are lightly browned, 16-18 minutes.

Transfer to a wire rack to cool completely. Store in a sealed container to keep them soft and chewy.

Makes 2 dozen cookies

* 1 teaspoon baking soda
* 3/4 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 2 3/4 cups rolled oats
* 1 cup raisins

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C).
2. In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets.
3. Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

1 teaspoon freshly ground nutmeg

1 1/2 cups chopped walnuts

Brown Butter Icing, recipe follows

Preheat oven to 350 degrees F.
Grease 1 or more cookie sheets. Using an electric mixer, cream together butter, shortening, and sugar in a bowl until fluffy. Add eggs and beat until mixture is light in color. Add buttermilk. Sift together flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice; stir into creamed mixture. Fold in oatmeal, raisins, walnuts, and vanilla, blending well. Drop by rounded teaspoons onto cookie sheet. Bake for 12 to 15 minutes. Drizzle with Brown Butter Icing.

Brown Butter Icing:
1/2 cup butter
3 cups sifted powdered sugar
1 teaspoon vanilla extract
3 to 4 tablespoons water
In a small saucepan heat the butter over medium heat until golden brown, stirring occasionally. Remove saucepan from heat; stir in 3 cups sifted powdered sugar and 1 teaspoon vanilla. Stir in enough water (3 to 4 tablespoons) to make an icing of drizzling consistency. Drizzle on warm cookies.

Yield: enough to ice 5 dozen cookies

I hate raisins, so I don't eat these, but my boys LOVE them
Breakfast Cookies
Ingredients:

4 cups oatmeal
1 1/4 cups brown sugar
1 cup oil
3 eggs
2/3 cup powdered milk
1 teaspoon vanilla
1 cup walnuts
1 Cup rasins
3/4 cup chocolate chip
3/4 cup coconut

Mix oatmeal thru oil and set overnight. Next day mix that with the remainder of the ingredients. Spoon on greased pan Bake at 350F for ten mins.

2 eggs
3 1/2 c. quick-cooking rolled oats
1 pkg raisins(of dried cherries or cranberries)
1 c. chopped walnuts (opt)

Mix flour with baking soda. Combine butter, the sugars, vanilla, and pudding mix in a large mixer bowl. beat until smooth and creamy. Beat in eggs. Gradually add flour mixture;then stir in raisins and nuts. (Batter will be stiff) Drop by rounded teaspoons onto ungreased baking sheets, about 2" apart. Bake at 375 degrees for 10 to 12 min. Yields about 5 dozen.

Go to the Quaker Oatmeal site and then go to the recipe section they have the best cookies there. I use this site on a regular basis and print copies so that others can use the recipe.
