OVEN FRIED CAJUN CHICKEN
1 frying chicken or 6 breasts or 6 leg thigh quarters
1 cup flour
black pepper and garlic powder (for sprinkling)
Creole seasoning
paprika
cayenne pepper
1/2 cup butter
Preheat oven to 425°F.
Pat chicken dry with a clean paper towel and sprinkle with garlic powder and Creole seasoning.
In a Ziploc bag, combine 1 cup flour, 1/4 teaspoon black pepper, a pinch of cayenne pepper (optional - adjust heat as desired), 1/2 teaspoon paprika and 1/2 teaspoon Creole seasoning. Close bag and mix well.
Shake chicken in the bag with flour and seasonings. Line a 9 x 13 inch glass baking dish with foil. Add butter and place in oven until it sizzles. Place chicken in dish, skin side down. Bake 30 minutes; turn reduce heat to 325°F degrees and bake 35-45 minutes longer or until chicken is cooked through (this depends upon the weight of the chicken). It will be a beautiful golden brown and very tender when done.

1 tablespoon butter

1 1/4 teaspoons salt

3 to 3 1/2 pounds chicken pieces
Heat oven to 425°. Put butter in a 13x9x2-inch baking pan; place the pan in the oven to melt butter.
Meanwhile, mix flour, paprika, salt, and pepper. Coat chicken pieces with the dry mixture; place skin sides down in hot melted butter in baking pan.
Bake chicken, uncovered, for 35 minutes; turn chicken pieces. Bake for about 15 to 20 minutes longer, or until juices run clear from thickest pieces. Oven fried chicken serves 4 to 6.

Oven Fried Cinnamon Honey Chicken
1/2 cup Flour
2 teaspoons Salt
3/4 teaspoon Cinnamon
1/4 teaspoon Turmeric
1/4 teaspoon Pepper
1 Egg
2 tablespoons Milk
1/3 cup dry breadcrumbs
2 tablespoons Oil
3 pounds Chicken cut in 8 pieces
Sauce:
1/4 cup Melted butter
1/4 cup honey
1 tablespoon lemon juice
Combine flour with all spices. Beat egg and milk. Coat chicken pieces with flour. Combine breadcrumbs with egg mixture to form a soft moist mixture. Roll floured chicken pieces in moist crumb mixture and arrange skin side up in roasting pan. Sprinkle with the oil.
Bake about 40 minutes or crisp and brown. The last 15 minutes pour over the combined melted butter, honey and lemon.
This recipe works well with skin removed.

Spicy Unfried Chicken
INGREDIENTS:
vegetable oil cooking spray
6 chicken breast halves, skin removed (I use boneless)
6 chicken drumsticks, skin removed
3 1/2 cups ice water
1 cup plain nonfat yogurt

Breading:
1 cup dried Italian bread crumbs
1 cup all-purpose flour
1 tablespoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon Creole seasoning
1/8 teaspoon freshly ground black pepper
Dash cayenne pepper 1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
PREPARATION:
Lightly coat a baking sheet with vegetable oil spray.
Put the chicken in a large bowl with the ice water. Put the yogurt into a medium bowl. Set both aside.
Put all the breading ingredients into a large food storage bag.
Seal and shake well to mix. Remove 2 pieces of chicken from the ice water. Roll each piece in the yogurt. Put the chicken into the plastic bag, reseal and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Repeat the process until all 12 pieces are breaded. Spray the chicken pieces lightly with the vegetable oil spray.
Place the baking sheet on bottom shelf of preheated 400° oven; bake for 1 hour, turning the pieces every 20 minutes to allow even browning. Serves 8 to 10.

Oven Fried Chicken 1 chicken with skin on cut into pieces 2 cups buttermilk about 1/2 box cornflakes crushed into crumbs in a plastic bag 1 cup Bisquick 1 teas each Granulated Garlic, Salt, Paprika and Black pepper. Soak the chicken overnight in the buttermilk in a plastic bag after removing any extra air in the bag. Enzymes and acid in the buttermilk will partially chemically "cook" the chicken and tenderize it. Get another big plastic bag and crunch up the corn flakes to make about one cup of crumbs. Add in flour and spices and shake together. Remove the chicken pieces one at a time and shake in the crumb mix. Partially drain each piece since excess moisture will not help the crumbs mix stick and make the crumbs too wet. Set the shaken pieces onto a heavy casserole dish or baking pan. Put the breasts and heavier pieces to the outside of the pan. Put pieces in skin side down. Turn on oven after shaking all the pieces since letting them sit for a bit helps the coating stick to it. Bake at 350 for about 30 minutes and turn pieces over. When the chicken starts to run clear juices, check the breasts to see if it is cooked by breaking open. If it is not pink in the middle it is done. Total baking time should be about an hour.

My own oven fried chicken recipe is very close to the Mississippi one. I use it all the time, and it is requested when I serve it to guests.
I sprinkle the chicken with salt, pepper, garlic powder and a light dusting of Aromat seasoning although Lawrys will work also, then I dust with flour, dip in beaten egg then dip in crushed corn flakes. Put on foil lined cookie sheet and a light coating of oil. Bake at 425 for 15 min, turn and cook until done, about another 15-20 minutes. This comes out crunchy, crisp and tasty every time. Promise! Enjoy.
note: I use this for all kinds of recipes. I put cooked spaghetti noodles on a platter, some sauce down the center, the chicken on top of sauce, some mozzarella cheese sprinkled on top, quick visit to the broiler and some chopped fresh parsley over all before serving. Sauce in a gravy boat along side. Soo good, so pretty, so easy!

INGREDIENTS
* 1 (2 to 3 pound) whole chicken, cut into pieces
* 1 cup dried bread crumbs
* 1 teaspoon garlic powder
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 teaspoon dried thyme
* 1/2 teaspoon paprika
* 1 cup mayonnaise
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl or gallon size resealable plastic bag, mix together the bread crumbs, garlic powder, salt, pepper, thyme and paprika.
3. Coat the chicken pieces with mayonnaise. Place chicken pieces in bowl/bag with bread crumb mixture and coat/shake until well coated. Place chicken pieces in a lightly greased 9x13 inch baking dish and bake for 45 minutes or until juices run clear.

8 boneless skinless chicken breasts (2 1/2 lb)
1 cup Country® Corn Flakes cereal
1 cup Original Bisquick® mix or Gold Medal® all-purpose flour
2 packages (1 oz each) ranch dressing mix (dry)
Cooking spray
1. Heat oven to 400ºF. Spray cookie sheet with cooking spray.
2. Pour buttermilk into shallow glass or plastic bowl. Add chicken; turn to coat. Let stand 5 minutes.
3. Meanwhile, in 2-quart resealable food-storage plastic bag, crush cereal with rolling pin. Add Bisquick mix and dressing mix (dry) to cereal in bag. Remove chicken from buttermilk; discard buttermilk. Add chicken to cereal mixture. Seal bag; shake to coat.

I have yet to come up with an oven fried chicken recipe that makes me enjoy it as much as fried chicken. I end up wanting the oven method to be roasted chicken.
If you are going for healthy... you could always do fried chicken but canola oil. Which by the way, canola oil makes the BEST clean tasting fried chicken. Not greasy... crisp... perfect. I love to fry in canola... not too bad for you either. It's the healthiest oil.

6 skinless chicken drumsticks
6 skinless chicken breast halves

Very very basic...
3 cups self rising flour
1 teaspoon of salt
1 tablespoon of pepper
1 tablespoon of garlic powder
1 small carton of buttermilk
Mix all the dry ingridents together in a heavyduty gallon ziplock bag.
Wash the chicken of course....
Next dip the several pieces of chicken in the buttermilk and place into ziplock bag and shake. (For even thicker crust for skin, re-dip into buttermilk and return back into ziplock bag.
After all pieces are coated, place in the fridge for 30 min. then fry at 350 degrees. (temp is important. if this is not correct, it will not turn out right. purchase a thermometer for less than $5.)
Should come out very good. I've never had any complaints. Oh, and I always re-dip in buttermilk
*** If you want to try something different, put about 4 tablespoons of sesame oil into regular oil for more flavor.***

k, take your chicken, rinse it well in water, then get some flour, and tony schacerys spice and mix them together in a bag, then put your chicken in, one piece at a time and shake, then put in a casarole dish, then melt some butter, and drizzle it over top of the chicken, not too much though, and then bake till crispy
