I am having some friends over for dinner tomorrow night and I have a 2.5 lb pot roast? is that enough or should i buy another one. It kinda turned out to be a lot bigger than expected when my roomies and I started inviting our friends when we were at the bar.

rather be safe than sorry buy a 4-5 LB eye roast. 325
15-20 minutes per pound, the eye roast will just fall apart and be real tender. you can always save some for another night if you have extra meat. mashed potatoes will also fill up your guests.

The size of your roast would depend on the appetites of your guests....For 8-10 people I would get a 10-14 pound roast (but you should allow at least 8 ounces of meat per person). I live with serious eaters and a 2.5 pound roast would be dinner for 2-3 (and there wouldn't be any leftovers).

You could slice your roast into thin strips (about 1/2 inch wide and 2 inches long) and make make peppered steak if you wanted to stretch what you have into a workable dinner. Season and flour the strips of meat, heat a little oil in a large skillet and lightly brown the meat....In a separate 6 quart pot, add about 5 cups of beef broth, green, red, and/or yellow bell peppers (also cut into thin strips) and about 1 1/2 cups of long grain rice (I like to add sliced mushrooms to mine / about 1/2 pound) ...simmer all on low heat until the rice is cooked....VOILA you now have dinner for 8!! (Although, again, I would use about 4 pounds of beef to make this meal for 8-10 people).

Sorry the measurement aren't exact but I was taught to cook without measuring ingredients.

I would say that you do not have a big enough roast. But here are my suggestions for fixing that problem.

My suggestion is a 1/2 pound per person. But you can mitigate this by your sides. More sides.. less meat.

Also, you can make more out of less by preslicing or pre-pulling the pot roast and plating it in the kitchen with the sides and put gravy on it. This will allow for more evenly distributed portions. Also the way you plate it will make it look a little 'bigger' than what it is.

But if your friends are anything like my family, the pot roast isn't going to be enough for one round of dinner let alone seconds. I'd say ... buy another smaller one to accompany your bigger one.

Oh, you need another, sweetie. Or if you're really into it, you can try another meat to serve with the pot roast as well. Give your guests a variety like a roasted chicken (which is soooooooooo easy to make) or a pork tenderloin.

You definitely need another one about 6 -8ozs per person.I would say a 4 to 4 1/2 pounds should be fine.

3 oz. per person so you would need a 2 lb roast I would double that because it is good to have left overs and the roast does shrink in size when cooked.

If that's all your going to have , you need a bigger one. But make sure you have at least 3 to 4 sides with it and it will be enough. especially make meshed potatoes and make a dessert too that way just before you sit down to eat announce we have dessert , too. So have a nice meal.

The usual rule of thumb is to allocate half a pound of meat per person, so if you anticipate ten diners, you need another two and a half pounds of beef.

I would get 7 pounds of roast beef, already sliced.
